a pgh grey day. the squid is thawing in the fridge and the baccala is soaking.
cutting that into manageable pieces to let them soak is quite a job. like cutting wood with a kitchen knife.

My Ex-Mom-In-Law introduced me to Baccalhau (she's Portuguese.) What amazing stuff! They throw the whole fish in piles on the floors of the little corner stores near here, then run it through a band saw to make the size pieces you want.

It's so brilliantly un-American!

I take it you're coming from an Italian tradition on this?

yep! i really dislike fish but some of my family love it so on christmas eve we all go to my daughter's house and i cook. we have calamari in sauce and baccala in oil with hot pepper flakes and lots of garlic (this year i'm adding capers and tomato chunks) and homemade cheese or meat raviolis(the kids make those)and tomato sauce with pork and meatballs( some just plain sauce for my niece who won't eat red meat)and pizza fritte and sald and

(my fav)ton o cookies! ; )
