PUMPKIN COOKIES (for sue)







These heavenly cookies are moist and chewy with a cakelike texture. The dab of delicious icing is sure to satisfy your sweet tooth. But be careful: it's hard to stop after one cookie!


RECIPE INGREDIENTS
For the Cookies:
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup sugar
1 cup Wild Oats Butter, softened
1 Wild Oats Organic Egg
1 cup unspiced pumpkin
1 teaspoon vanilla extract
1/2 cup walnuts, chopped (optional)

For the Icing:
3 Tablespoon Wild Oats Organic Butter
4 Tablespoon Wild Oats Organic Milk
1/2 cup brown sugar or sucanat (sucanat is sugar in its most natural form. )
1 cup powdered sugar
1 teaspoon vanilla extract




DIRECTIONS
Preheat oven to 350 degrees F. Mix together flour, baking powder, baking soda, and cinnamon in a small bowl. Set dry ingredients aside.


In a large mixing bowl, cream together sugar, butter, egg, pumpkin and vanilla. Add dry ingredients. Stir in the nuts.


Drop by teaspoonfuls onto ungreased baking sheets. Bake for 10 to 12 minutes.


To make icing, combine butter, milk and brown sugar in a small saucepan. Bring to a boil and boil for two minutes, stirring continuously. Cool, then add powdered sugar and vanilla. Spread icing on cooled cookies.
