Oh, baccala! That is Christmas Eve tradition from Portugal as well. When CR and I were together, we always cooked it with all the Portuguese trimmings but in my new life I have not been consistent with it. This year we're not doing it because we're having my step-daughter's future in-laws over. I just can't fit it in. But you're making me want to prepare "bacalhau", as it's called in Porguese, sometime before the new year.
i cook it in tomato puree. just that and a little cracked black pepper. i saute the calamari in a skillet til it turns white and curls and then i put it into the big pot of puree and simmer for about 7 hours. it takes forver to get tender but it does.
then the ones that like it put it over homemade cheese or meat raviolis, but you could use any type of pasta.
the baccala, i put in a cassorole dish with olive oil and sliced garlic and red pepper flakes and capers and a can of crushed or diced tomatoes and bake it. doesn't take long for that.

i've got the baccala soaking in water in the fridge. every time i change the water the pets are looking to see if i'll drop the container!
the cats will go crazy tomorrow while i'm cooking it and the squid.
